I understand the concept of this, baking gammon in pastry, it's a pork pie of sorts.. I thought I knew quite a bit about boiled meats which were the staple of England and New America, but I haven't seen this before.

Certainly tell the English influence, what with using lard and talking about a gammon joint. Not tried this technique with a Xmas gammon but might need to try it sometime.

I have Cooking Price-Wise on a hard drive of vintage cooking shows. Done in 1971 for ITV (in the UK). Fun to watch, & the lighting/colours of 70s food bring a ghoulish quality that suits Vincent Price. 😆
