🫓 Sourdough Tortilla Recipe
Yields: 8–10 medium tortillas

• 2 ½ cups all-purpose flour (or a mix of all-purpose and whole wheat)
• ¾ cup sourdough starter discard or active (100% hydration)
• ⅓ cup warm water (adjust as needed)
• ¼ cup olive oil, avocado oil, or soft butter
• 1 tsp salt
• Optional: ½ tsp baking powder (for extra puff)

1. Mix the Dough
In a large bowl, combine:
• 2 ½ cups flour
• ¾ cup sourdough starter
• ⅓ cup warm water
• ¼ cup oil or butter
• 1 tsp salt
Mix until a soft, slightly sticky dough forms. Add more flour or water, 1 tbsp at a time, if needed.
2. Knead
Knead for 5–8 minutes until smooth and elastic.
3. Rest the Dough
Cover with a towel or wrap and let it rest for at least 30 minutes at room temp (up to 2 hours). This helps relax the gluten so tortillas roll out easier.
(For extra flavor, you can rest it in the fridge overnight, then let it come to room temp before rolling.)
4. Divide and Shape
Divide into 8–10 equal pieces. Roll into balls and let them rest for 10–15 minutes.
5. Roll Out
On a lightly floured surface, roll each ball into a thin circle (about 6–8 inches wide). Don’t stack unfloured tortillas—they’ll stick!
6. Cook
Heat a dry skillet (cast iron or non-stick) over medium-high heat.
Cook each tortilla for 30–60 seconds per side, until light golden spots form.
Keep warm in a clean towel.
