@goh_ngaileng: A popular snack in town recently - baked butter mochi 😋 Very delicious but quite expensive selling in local bakeries. Search online for recipes and tried out my version done in an air fryer. Although the shape was not uniform and neat, the butter mochi has a nice caramelised taste and crispy crust. Need to work on the baking temp and duration maybe 🤔 Air Fryer Butter Mochi Yield: about 9 Madeleine shape mochi Ingredients A 1 egg, 53~55g Pinch of low-sodium salt 10g fine sugar 15g raw sugar/fine sugar B 100g low-fat milk 8g condensed milk C 80g glutinous rice flour 10g tapioca starch 10g milk powder D 30g unsalted butter, melted* *collect 25g for mixing with the batter, and keep the remaining for coating the Madeleine mould. Directions 1. Keep warm B and D in separate containers in a rice cooker till the butter melted. Keep warm till ready for mixing. 2. Mix A till most of the sugars have melted. 3. Mix B to the batter. 4. Gradually mix C mixture, spoon by spoon, to the batter. 5. Mix 25g of D to the batter. Stir till no liquid butter can be seen. 6. Coat the Madeleine mould with the remaining melted butter. Pour the batter to the mould placed in the basket of an air fryer. Fill the batter to about 4/5 full. 7. Bake in an air fryer at 180°C for 10 minutes, flip the mochi and bake for 8 minutes, or till the entire mochi becomes golden brown. Let the hot mochi stay in the air fryer for another 5 minutes. 8.
