@ohhowcivilized: I’m a Tea Sommelier and this is week 5 of my cold brew tea series where I make a new cold brew every week this summer. This is my version of a Moroccan mint tea, which is made with fresh mint and gunpowder green tea. With Moroccan mint tea, the tea has to be gunpowder green tea. Green tea is very fickle and can get bitter quickly so I don’t cold brew it for too long. I usually cold brew it for 6 hours. Beyond the 9 hour mark, I could start tasting some bitterness. There’s no sugar in this drink, which is usually in Moroccan mint tea, but if you want to sweeten it, add simple syrup. I always add simple syrup instead of sugar into cold drinks since it mixes into the drink easily. From my cold brew tea formula of 1 tea, plus 1 fruit plus 1 citrus plus 1 herb, I simplified it by adding just the herb to the tea. You don’t have to use the entire formula each time you cold brew. Make sure to wash the fresh mint first and tear it into pieces. Put the tea and mint into a container and add cold or room temperature water. Refrigerate for 6 hours and strain out the solids.
