I havnt tried it and neither have you but knowing how it tends to work with eggs and think the increased surface area of a scrambled pancake could leave it with way more crispy bits so if that's what your there for it may actually be pretty good if not categorically a different food like omelets to scrambled eggs

I’ll just go ahead and say it whoever made it might be onto something it could scrambled funnel cake to spread the butter and syrup easier instead of having them stacked on top of each other as a pancakes
