you can't really do that because e is not equal to the sum you wrote but to its limit
One common way to prove e is irrational is to look at the difference between the Taylor series and the partial sum and then the contradiction is about finding and integer between 0 and 1

But the expression for e¹ is an infinite series. I don't think this proof considers how (1/(n+1)! + 1/(n+2)! + ...)n! may actually evaluate to an integer; just that the first of its terms, n!/(n+1)!, isn't.
