I tried but meat tastes like rosemary ad bay leaf I didn't use much infact used very little, rosemary flavour overpowered all other flavours I think if one need to taste the taste of meat just use salt , maybe lemon too much of spices you won't taste the sweetness of meat

To my knowledge brine is done to improve texture , retain moisture during cooking and make it tender , mostly done in turkeys and big chunks of meat
