I just wrap a large piece of ginger with aluminum foil and store in freezer door. When I need some, I take it out and cut off what I need and with a knife peel it. Put the rest back. It stays fresh a long time.

I don't like the idea of putting oil on the ginger. What if you're making something that doesn't require oil, like juicing or tea? Better yet if you don't use oil?
