Add oil. Add the chicken thighs to the bowl and toss to coat evenly with the spice mixture. Heat some oil in a large skillet over medium-high heat. Add chicken to the skillet and cook until browned on both sides and cooked through (about 5-6 minutes per side). Once the chicken is done, add the cheese slices on top of chicken cover on low until the cheese melts. Remove and set aside. For the sautéed vegetables: Sauté diced onions, bell peppers & mushrooms in oil. Season with salt, garlic powder & black pepper For the sumac onion and tomato salad: Combine sliced onions & chopped tomatoes.
