Ingredients 4 ears of corn (grilled or pan-charred) 1 avocado, diced 1 red chili or jalapeño, finely chopped ½ cup fresh cilantro or parsley, chopped Juice of 1 lime 2 tbsp olive oil ½ tsp smoked paprika Salt & pepper to taste Optional: sprinkle of cotija or feta cheese Instructions 1. Grill or char the corn until it’s golden and slightly blackened, then slice the kernels off the cob. 2. Toss corn with avocado, chopped chili, herbs, lime juice, olive oil, paprika, salt, and pepper. 3. Serve warm or chilled. Add cheese if you like — or keep it plant-based!
