One of my favorite things about growing new fruits is experimenting with new recipes and techniques to preserve them. I eat fermented foods like kimchi and sauerkraut every day for gut health, so when I stumbled upon this recipe for fermented bananas the same week I harvested 248 bananas in my back, it was meant to be. The recipe I used: •2L jar •6 cups of bananas chopped into chunks •2 cinnamon sticks •3-4 cups 2% brine (2% salt in water. This should be calculated using a scale. For me It was about 3 1/4 cups of water with 1 tablespoon of sea salt. Add the bananas to the jar. Add cinnamon sticks to the jar. Pour over enough brine to completely cover the bananas. Add a glass or ceramic fermentation weight to keep the bananas submerged under the brine. Place the jar on the counter, out of direct sunlight for 2 to 3 Days. Move the ferment to the fridge for 24 hours and it’s ready. I honestly don’t even know how to put this last year into words. I took the coaching position to help pay for my boys sports as a single mom. I knew the ladies i would be coaching with and was excited to see them again after so many years. Little did i know that this was about a lot more than just helping pay for my boys sports. This gave us a family and a support system. I have met so many incredible people during this last year who have made such an impact not only on me, but also my boys! Coaches, booster, parents, and of course the girls have changed me and my kids for the better. I didnt imagine it being so sad to end this year and having to say goodbye to so many wonderful people, but at the same excited for the girls coming into the program this coming year. Thank you everyone who has come into our lives and helped us navigate this new chapter for us. It means the world to me. ❤️ #lifeasacoach #momlife #thankful #singlemom #oklahoma
