It’s simple to make and so good for you 💛 Every Italian has their own way of making their vegetable stock or pastina in brodo but here are my top tips👇 👉 The best way to extract the flavour from the vegetables is by adding them to cold water first and then slowly bringing them to a boil. 👉 Season your stock only at the end or it could end up being too salty. 👉 A vegetable stock needs to cook gently for no more than 45 minutes to one hour. Your stock can be reduced and kept in the freezer and then used for a risotto, stew or to cook grains and legumes.
