This is my go-to recipe, perfectly balanced with semolina and 00 flour for elasticity, smoothness, and flavour. Just follow the ratio and you’ll get beautiful pasta every single time. What You’ll Need (serves 2–3): • 100g semolina flour • 100g 00 flour • 2 eggs (1 per 100g flour) • 6g salt (0.3x flour weight) • 4g olive oil (0.2x flour weight) Instructions: Combine semolina and 00 flour (always 50/50 ratio). Make a well (fontanella) and add eggs, oil, and salt. Whisk the eggs gently, then slowly incorporate the flour from the inside out. Once it starts holding, bring it all together. Knead by hand for 10 minutes until smooth and elastic. Wrap in cling film and rest in the fridge for 30 minutes.
