@eliyaeats: Rice Paper Sausage Rolls (300 cals & 27g protein each) Recipe (makes 5 large sausage rolls): - 10x rice paper sheets (2x per roll) - 2 eggs + 1/4 cup water - oil spray + sesame seeds for topping Filling: - 500g lean beef mince - 1/2 cup baby spinach chopped finely - 1 large carrot grated - 1 large zucchini grated (juices squeezed out) - 1/4 large onion, diced - 1-2 tsp minced garlic - 4 heaped tbsp tomato paste - 1 heaped tbsp soy sauce/tamari or wostersechire sauce - seasonings of choice- I use @mingleseasoning chilli umami seasoning - salt & pepper to taste 1. pre-heat oven to 200c 2. mix the filling ingredients well and set aside 3. crack 2 eggs & 1/4 cup water with salt & pepper into a shallow bowl 4. Dip 2 rice paper sheets into the mix and lay them down overlapping each other (refer to video) 5. Fill with the beef mince filling and roll into a sausage roll making sure the sides are tucked in. Repeat this until you make 5 sausage rolls. 6. Add onto a baking tray lined with parchment paper and spray lightly with some oil spray and top with sesame seeds(optional) 7. Bake for 20 mins, then flip halfway and bake for another 10-15 minutes *Store in the fridge for up to 5 days and re-heat in the microwave or airfryer for a crunchier sausage roll.
