As a food creator who believes that music and food go hand and hand, I’m excited to partner with @barilla on their premium Al Bronzo pasta line in collaboration with their newly released Al Bronzo Soundtrack.  The soundtrack was composed by White Lotus composer Cristobal Tapia de Veer and Oxford psychologist Charles Spence to enhance our pasta-eating experience by scientifically engineering each track to mimic the characteristics of six specific Al Bronzo pasta shapes. With fusilli, the accompanying track utilizes swirling glissandos (rapid slides along the musical scale) of a harp to accentuate the pasta’s unique, spiral shape since Al Bronzo fusilli’s carefully crafted shape delivers extraordinary sauce grip for more flavor in every bite. AL BRONZO FUSILLI W/ PEA & WATERCRESS RICOTTA: PREP: 10 MINS COOK: 20 MINS 3 SERVINGS INGREDIENTS: 1/2 box (7 oz) Barilla® Al Bronzo Fusilli 1 cup fresh or frozen peas 1 handful of watercress 6 mint leaves 1 cup ricotta 1 garlic clove 2 tbsp olive oil 2 tbsp lemon juice 1 tbsp lemon zest Gremolata: 1 handful of parsley 1/2 cup pine nuts 5 mint leaves 1 garlic clove 1 tbsp lemon zest 1/2 cup parmesan cheese INSTRUCTIONS: 1) Bring a large pot of water to a boil, cook pasta until perfectly al dente. 2) Bring a second pot of water to a boil, blanch peas, watercress, and mint leaves for 30 seconds. 3) Shock in ice water and pat dry. 4) Add to a blender with ricotta, garlic, olive oil, lemon zest, lemon juice, and 1/2 cup pasta water. 5) Season to taste with salt and pepper. 6) To make the gremolata topping, finely chop parsley, pine nuts, mint leaves, and garlic. 7) Mix in the lemon zest and parmesan cheese and stir to combine. 8) Season to taste with salt and pepper. 9) Drain the pasta and add the pea and watercress ricotta over medium heat until warmed through and the pasta is fully coated. 10) Plate with the gremolata topping and serve. #BarillaPasta #BarillaUS #AlBronzoSoundtrack #Ad
