@5lranchmt: We dry age our beef because it matters. Most places skip it. They want fast. But fast doesn’t taste this good. We hang our beef for 14 to 21 days. That’s time for moisture to evaporate, flavor to concentrate, and tenderness to happen naturally. You know all that liquid that spills out when you open a pack of meat from Costco? That’s the water they sealed in. We lose that in the cooler so what you’re getting is less water and more beef. It cooks better. It tastes better. And it’s worth it.
Exactly! I have walk in cooler in my garage like your commercial coolers and we hang our wild game at least 21 days and our meat is so tender when we cut it up!
