Spinach and Sundried tomato turkey meatballs!  The perfect addition to your weeknight dinner! Enjoy these delicious turkey meatballs over pasta, rice or cauliflower rice to up your veggie intake!  Tag me and try it! d’EATS -1lb ground turkey -1/2 cup shredded mozzarella cheese  -1/2 cup diced onion -2 minced garlic cloves -1/2 cup chopped Italian parsley  -1 tsp Italian seasoning -1 tsp salt  -1/2 tsp crushed red pepper  Sauce -1 tbsp butter -1 tbsp olive oil -1/2 cup diced onion -2 minced garlic cloves -5oz sun dried tomato -2/3 cup chicken or vegetable broth -1/2 cup half and half  -2 cups chopped spinach -1/3 cup shredded Parmesan cheese  How too: Start by mixing all your turkey meatballs ingredients in a large bowl. Form 8-10 meatballs and set aside.  In a large cast iron skillet heat 1-2 tbsp olive oil on medium heat. Add in your meatballs and allow to cook for 2 minutes on each side. Rotate meatballs 4x to cook for 8-10 minutes total. Cover meatballs with lid in between rotations to allow the middle to cook.  Once your meatballs are fully cooked remove them. In the same skillet heat 1 tbsp butter and add in your diced onion and garlic. Allow to cook for 2 minutes before adding in your chicken broth, sun dried tomato and spinach. Cook for 5 minutes and turn the heat to low. Add in your half and half, Parmesan cheese and add back in your meatballs. Allow meatballs to cook in sauce for 5-7 minutes before serving!
