This is why I love when I hear people advocate that we "eat the rainbow". Putting emphasis on incorporating veggies of all kinds, shapes, and colors because they can provide different sources of vitamins, minerals, and fiber. Not stressing on the amount, but encouraging trying them.

Green vegetables were selected. If you back in time or look at heritage seed catalogues, veggies are alllll different colors. Ever had purple broccoli? It’s delicious.

I wish the nutritionist I went to a few years back understood this! For context I’m a vegetarian, but because I wasn’t eating strictly green veg at the time he somehow put in my notes that I “wasn’t eating a plant based diet” 😒. How he got there, I’m not sure!

I no longer listen to anyone, and esp anyone I get nutrition advice from, who have opinions over which foods we should be eating or avoiding. Like the green food thing or the avoiding starchy veggies thing. Also, off topic but my green bean plants are giving this year. So crispy and sweet!
