Ingredients 1 cucumber 2 orange bell peppers 1 pint cherry tomatoes, halved 1 rotisserie chicken, diced into small pieces Reduced fat feta cheese Romaine lettuce, chopped Dressing: Basil pesto of choice Plain Greek yogurt Unsweetened almond milk Instructions 1. Prep your veggies and chop rotisserie chicken, set aside 2. Add desired amount of pesto and around 1/4 cup of yogurt to a bowl and mix tigether. Then slowly mix in almond milk to thin. Adjust pesto/yogurt according to taste preference. 3. Layer ingredients in glass jars starting with dressing then add cucumber, bell pepper, tomatoes, chicken, feta, and romaine. 4.
