I have a 2013 Ford Edge. This is probably a dumb question, but can any shop do the update? Do you have to bring it to the Ford dealership and is it an expensive charge for them to do the update?

sometimes If the update doesn't solve the complaint do the relearn on the hvac module with a scan tool. I have found that sometimes the module will glitch and you will get different Temps from the vents or they will switch to different settings were you'll have it set to be on vents but air will be coming out of floor or defrost. I've caught it alot here lately with toyota and chrysler products.
