Mum’s kitchen. Dog won’t stop barking. Mum won’t stop talking. Absolute chaos… but I love it. Who’s hungry? 🍋Lemon loaf Batter • 6 large eggs, room temp • 400 g caster sugar • Zest of 4 lemons and 1 lime • 240 ml double cream • 180 ml veg oil • 420 g plain flour • 2½ tsp baking powder • ¾ tsp fine salt • 80 ml fresh lemon juice • 1 tsp vanilla extract • 40 g unsalted butter, softened Lemon Syrup • 120 ml lemon juice • 120 g sugar Glaze • 200 g icing sugar • 2–3 tbsp lemon juice 1. Preheat the oven to 160°C fan and Butter 2 loaf tins 2. Rub the sugar with the zest 3. Add the eggs and sugar to a large bowl and whisk for 5 minutes until pale and slightly thickened followed by the double cream 4. Add the dry ingredients to the wet mixture 5. Add the oil and lemon juice and divide the batter evenly between the two tins and level the tops. 6. Bake for 55–65 minutes 7. While the loaves bake, heat the lemon juice and sugar together until the sugar has dissolved. 8 whilst the cakes are still hot, pour the syrup all over the cakes, wrap and leave in the fridge overnight 9. Brush the cakes with the glaze, allow to set and slice up and enjoy #whoshungry
