Hot Honey Chicken Garlic Quesadilla Bowls😍  If you love a picky dinner this one’s for you 🤌🏼 sticky hot honey chicken, crispy garlic butter quesadilla wedges, fresh salad with a smoky chipotle dip 😍  Ingredients (serves 2):  250g chicken breast, diced 1 tsp smoked paprika 1 tsp garlic granules Salt Black pepper 20g honey 1 tbsp hot sauce Pico de Gallo 100g cherry tomatoes, quartered ¼ red onion, finely diced 1 tbsp fresh coriander, chopped 1 tbsp lime juice Salt Garlic Butter Quesadillas 2 mini tortilla wraps 20g reduced fat cheddar grated  40g mozzarella grated  10g light butter spread, melted 1 tsp chopped garlic 1 tsp fresh coriander finely chopped  
Chipotle Mayo Dip 40g light mayonnaise 30g fat free Greek style yoghurt  ½  tsp chipotle paste 1 tsp lime juice Salt To serve: 150g microwave mexican flavoured rice  80g sweetcorn  2 tbsp pickled onions  💞Mix together the pico de gallo ingredients.  💞Mix together the chipotle mayo dip ingredients.  💞 Fry the sweetcorn for a few minutes until lightly charred remove from the pan.  💞Season the chicken with the smoked paprika, garlic granules, salt and black pepper. Fry until cooked then stir through the honey and hot sauce until thickened.  💞Add the wraps to a pan. Place the cheese onto one half of each wrap. Fold and cook until golden each side.  💞Mix together the melted butter, garlic and coriander. Brush over the quesadillas, flip and cook for 30 seconds. Slice into wedges.  💞Heat the rice and divide between bowls. 💞Top with the chicken, sweetcorn, pico de gallo and pickled onions. 💞Arrange the quesadilla wedges around the bowl. Serve with the chipotle mayo dip.
