Durian season’s here, so I made something a little nostalgic, rice pudding inspired by Mum’s nasi durian. It’s creamy, a bit salty, full of durian, and topped with toasted coconut and gula Melaka. Resipi di bawah. 💚 #GrabApaSajaDurian2025 #grab #fyp #durian #delicious #EasyRecipe #aniscooks #dessert #yummy                                         Nasi Durian-Inspired Rice Pudding with Toasted Coconut Ingredients: ¼ cup dedicated coconut 1½ cups thick coconut milk ¾ cup water (or more as needed) ¼ tsp salt 4-6 tablespoons brown sugar (adjust to taste) 1 ½ cup durian flesh (fresh or thawed frozen, mashed) 1 pandan leaf, knotted (optional) 2 cups cooked jasmine rice (preferably still slightly warm) For the garnish: Extra toasted dessicated coconut Pinch of salt Melted palm sugar (gula melaka) Method: In a saucepan, toast the desiccated coconut over medium heat until lightly browned. Add the coconut milk, water, sugar, salt, and pandan leaf (if using). Stir to combine and bring to a gentle simmer. Add the cooked rice and stir gently to loosen the grains. Simmer over medium-low heat for 10-15 minutes, stirring often, until the mixture thickens into a creamy, pudding-like consistency. Add a splash more water if it becomes too thick. Stir in the mashed durian and continue to cook for another 5 minutes, until well combined and heated through. Taste and adjust the sweetness if needed. Remove the pandan leaf, if used. To serve, spoon the warm rice pudding into bowls and top with a generous sprinkle of toasted coconut, melted palm sugar, and extra fresh durian. Chill in the fridge for 2 hours before serving, if desired. Enjoy!
