Pork Parmesan Medallions using @Yo Mama's Foods!  Ingredients:  * 1 Pork Tenderloin - About 1 1/2 lbs - Cut Into 1 inch Medallions  * 1/2 Cup Olive Oil * 2 Eggs - Whisked  * 1 Cup Flour * 1 1/2 Cups Panko Breadcrumbs  * 1/2 Cup Freshly Grated Romano Cheese (or Parmesan)  * 1 Cup Mozzarella - Grated * 1 Jar of Your Favorite Yo Mama’s Sauce * Salt & Pepper * Fresh Parsley  Preparation:  1. Preheat your broiler to high.  2. Remove the silver skin from the tenderloin, and cut into 1 inch medallions. Season well on both sides with salt & pepper.  3. Place the eggs, flour & panko into three separate dishes & season each with a bit of salt & pepper.  4. Add 1/2 Cup of the Romano cheese to the breadcrumbs & mix well.  5. Lightly coat each medallion with the flour - shaking off the excess. Dip into the whisked eggs & then into the breadcrumb mixture - pressing down a bit to ensure that they adhere.  6. Heat a large skillet over medium-high heat & add in the olive oil. Fry the medallions until they’re golden brown - about 2 1/2 - 3 minutes. Flip & cook for an additional 2 1/2 - 3 minutes.  7. Ladle some sauce into a dish that is safe for the broiler & add in the medallions. Spoon a bit more sauce on top of each and grate some fresh Romano on top - followed by the mozzarella cheese.  8. Place under the broiler for 2 - 3 minutes, or until the cheese is melted & golden in spots.  9. Remove from the oven & sprinkle with fresh parsley. Serve atop mashed potatoes or pasta.
