Ad | Blackberry Custard Buns Recipe 🫐🤍 Soft yeast buns filled with creamy vanilla custard and juicy blackberries – tender, fluffy, and beautifully shaped. 🥰 📝 Ingredients Makes: approx. 16 buns Dough • 250 g all-purpose flour (2 cups) • 40 g sugar (3 tbsp) • 1 tsp dry yeast • 120 ml lukewarm milk (½ cup) • 40 g soft butter (3 tbsp) • 1 egg • 1 pinch salt • some freshly ground vanilla (from a vanilla mill) Custard • 250 ml milk (1 cup) • 1 egg yolk • 40 g sugar (3 tbsp) • 20 g cornstarch (2 tbsp) • some freshly ground vanilla (from a vanilla mill) Filling • a few blackberries, thinly sliced Extra • 1 egg yolk + 1–2 tsp milk • powdered sugar for dusting 🤍 Instructions 1. Sift the flour into a bowl and make a well in the center. Add the yeast, a little sugar, and some milk. Let activate until slightly foamy. 2. Add the remaining dough ingredients and knead into a smooth dough. Cover and let rise for 60–90 minutes until doubled. 3. For the custard, heat the milk. Whisk egg yolk, sugar, vanilla, and cornstarch together. Gradually whisk in the warm milk, return to the saucepan, and cook until thickened. Cover and let cool completely. 4. Divide the dough into 2 portions. Roll each into a 25 cm (10-inch) circle and cut into 8 triangles. 5. Spread a little custard on the wide end of each triangle and top with 3–4 blackberry slices. 6. Fold the filled edge once over the filling. Cut 4 slits into the remaining dough, then roll up toward the tip and connect the ends to form the shape. 7. Place on a lined baking sheet and let rise for 15–20 minutes. 8. Brush with the egg wash and bake at 180°C (350°F) for 20–25 minutes until golden. 9. Let cool and dust lightly with powdered sugar. Enjoy baking 🤗 🤍
