Have you tried mochi ice cream? Not exactly a sandwich, but it’s an individual icecream treat and comes in lots of non chocolate flavors.

I don’t like chocolate and chipwich has sugar cookie ice cream sandwiches with vanilla ice cream and sprinkles. I’m not a fan of the sprinkles, but the ice cream sandwich as a whole are really good

Honestly „worst“ scenario get some cookies and ice cream you like and make your on sandwiches. Prep them and you can always have your own personal ice cream treat ☺️
