Mini Lussekatter aka Saffron buns 💛 A Christmas Favourite in Sweden and eaten throughout the Christmas period to Celebrate St Lucia day (13th December) These mini versions are fluffy inside with a little crunch on the outside. They’re eggless and easy to adapt to vegan. 💛  I made the dough in the same way as my cinnamon rolls (2nd post top of my page)  Saffron Bloom: 40ml hot water  1/2 x tsp saffron 1/2 x tsp sugar  Dough: Saffron bloom 260ml lukewarm milk  7g instant yeast  30g sugar  85g butter  480g flour (more for kneading)  30g butter for grating (pop this in the freezer while you make the dough)  30g butter melted for brushing after cooking  Sugar for dipping  Start by blooming your saffron, grind the saffron and sugar together and add the hot water, cover with a plate. Put 30g of butter to the freezer to use later.  Add the yeast and sugar to the lukewarm milk and stir / whisk. Add your saffron mix and then your butter and whisk.  Add the flour and stir till combined into a shaggy dough, place on a WELL floured surface and knead for 5-10 min (the longer the fluffier the bread) cover and rest for 1 - 1.5 hours. If your house is cold like mine you could try putting in the oven with the light on.  While dough is rising prepare a large baking dish with parchment paper (I use the one that comes with the oven)  After the dough is risen roll it out into a thin rectangle 2-3mm thick. Using a pizza cutter slice down the middle vertically  and then horizontally into strips mine were 1cm to 1.5cm width. Roll each one up as shown in the reel, half way then flip it over and roll the other side up. Place in your baking dish and cover for 30 min while you heat the oven to 180C (fan)  After 30 min grate the frozen butter all over the buns and bake on a low shelf for 15-17 min.
