These are my Spicy Mexican-style Bean Burgers #AD / Cinco de Mayo is coming up...it's a Mexican day of celebration and it's all about big bold flavours... So this Bank Holiday I wanted to make a dinner with a bit of a Mexican twist.  All of these ingredients are from @Aldi UK  and I honestly don't have the words to describe just how good this burger is... It was so easy, it tasted amazing, but it didn't cost a lot - which all feels very on brand for ALDI! I used tins of their Taco Beans in Tomato sauce, with Farmhouse Breadcrumbs and Jalapeno Jam all coated in a salted tortilla crumb for a bit of crunch. I've discovered some new favourite Aldi ingredients whilst I was making this, so I'm going to pin my shopping list to the comments and I've written up the burger recipe below. Let me know if there are any other ALDI products that I NEED to try! Amy x Makes 4 burgers 200g fresh white farmhouse bread 2 x 400g tins of Aldi Taco Beans in Tomato Sauce 1.5 tsp chilli powder 1.5 tsp ground cumin 2 tsp smoked paprika (plus 1/2 tsp extra for the crumb) 1 tsp garlic granules 100g drained sweetcorn from a tin A heaped dessert spoon Specially Selected Jalapeno Chilli Jam  40g plain flour 2 large handfuls of salted tortilla chips 1/2 tsp dried oregano To serve: 4 Slices of Aldi Spicy Cheddar 4 seeded brioche buns Lettuce Sliced Tomato Aldi Reduced fat Soured Cream & Chive Dip Put the bread in a food processor and blitz to a crumb Place 1 full can of taco beans in tomato sauce with 1 drained can of the taco beans. Blitz until smooth. Put the breadcrumbs and the bean puree in a mixing bowl with the chilli powder, paprika, cumin and garlic granules, sweetcorn, jalapeno jam and flour. Season with salt and pepper. Mix until thoroughly combined. Place the salted tortillas in a mixing bowl with 1/2 tsp paprika and 1/2 tsp oregano. Crush them to a crumb with the end of a rolling pin and place on a flat plate. Divide the bean mix into 4 equal balls. Roll them in the tortilla crumb until coated, before pressing them into a thick burger shape. Chill in the fridge for 30 minutes. Heat a couple of glugs of oil in a large non-stick frying pan with a lid. Add the burgers to the pan and fry on a medium heat for 5 minutes until crisp. Turn them over and lay a slice of spicy cheese on top. Place the lid on the pan and leave to fry for another 3-5 minutes, or until the cheese has melted and the other side is crisp and golden brown.
