Who’s going to make one to celebrate the upcoming long weekend? After the passing of her beloved husband in 1861, Queen Victoria found comfort in the quiet retreat to her Isle of Wight home, where she was encouraged to host tea parties to lift her spirits. It was during this time the iconic Victoria Sandwich was born, a delicate sponge cake made light and airy thanks to the newly invented baking powder. Originally a simple sponge with a raspberry jam middle layer, it was baked in a square tin and cut into finger ’sandwiches’. Still a simple sponge of butter, sugar, eggs and flour, we’ve jazzed it up for the Victoria Day Weekend with the addition of a buttercream filling and fresh raspberries. Victoria Sandwich You will need: 4  large eggs 230g butter 230g caster or superfine sugar 230g self-rising flour raspberry jam, homemade or good quality buttercream, if desired Steps … 1. Preheat oven to 350F (180C). 2. Prepare two 8” round cake pans by greasing bottom & sides and lining bottom with parchment paper 3. In a large bowl, cream the butter and sugar together until pale yellow, light and fluffy. Scrape down the sides and mix again. 4. Whisk the eggs together thoroughly in a small bowl. Gradually add the eggs to the mixture, beating well each time. Scrape down the sides and beat again. 5. Sift the flour onto the surface of the batter and gently fold into the mixture using a large spoon. 6. Divide the batter evenly between the two prepared tins, measuring the weight for even sizes. Smooth out the batter with a spoon. 7. Bake in the centre of the oven for 25 minutes. The cakes should spring back in the centre when lightly touched with a fingertip. 8. Remove from oven and let cool for 5 minutes, then remove from pans to completely cool. 9. Sandwich the two layers together with some fresh raspberry jam, and if desired, buttercream 10.
