Preheat oven to 450°F (230°C). 2. Mix in cream cheese and sugar. Whisk eggs one at a time. 3. Add cream, salt, and vanilla. Add flour (optional). 4. Bake on the middle rack of the oven for 50-55 mins or until the top part is very dark. Center should be jiggly, but edges should be set. 5. it’s not overcooked, it looks like that cuz she added flour. basque cheesecake usually doesn’t have any so it’s runny, this one does, so it isn’t as runny !!

I like these because somehow they feel less heavy than normal cheesecake even though they still have an insane amount of cream cheese. They're so light and fluffy while still being rich. The caramelized outside is a perfect counterpoint to the subtly sweet inside.
