I’ve been on a similar journey for about 20 years. You have a lot of the symptoms I have had and have. I went to all the doctors and specialists and had “normal” results. I’ve been to every type of doctor eastern and western. You need to go to a functional doctor and have them run their lab tests which unfortunately is not covered by insurance in most cases. The labs ran at hospitals and doctors that take insurance will not uncover what is going on with you especially given what you’ve shared. Trust me, I’ve been there. I’ve spent hundreds of thousands of dollars. For me it was C-PTSD, which led to a dysregulated nervous system, which led to high cortisol, which led to gut issues (made worse by taking too many rounds of antibiotics), and was compounded by toxin overload which no regular lab test will show. I’m working through the healing now but it takes time.

Negative labs doesn’t rule out autoimmune disease

Some doctors will only give you answers for there specialty unfortunately. I dont know why they couldn't say , see your primary to run more tests or get a referral to oncology. Please see another doctor. it probably isn't autoimmune but it's not normal to have night sweating and high white cell count.

I feel like she’s just looking at checklists and forgetting that some things show up differently in different people

I suggest getting a naturopathic doctor! They help with adding supplements and checking bloodwork often to check improvements. It’s changed my life so much!!
