@chaoticforager: Here’s how to lactoferment chanterelles! It’s one of the easiest, safest ways to preserve your mushrooms and turn them into something way more interesting, tangy, and packed with umami. Don’t let fermentation scare you! It’s one of the oldest food preservation methods for a reason. I forgot to mention this in the video, but make sure that after your mushrooms have achieved their optimal fermentation (usually after about 5 days or so), you store them in the fridge to slow the fermentation back down.
