Oh you’re bringing it down in temp and bringing it back up multiple times, this is extremely dangerous. If you do a perpetual stew it MUST REMAIN at 140 always at the least. Do not let it become room temp to strain, get a better strainer to use after thinning your broth. Please be very careful. You’re entering the danger zone multiple times
