@fit_foodie_lulu: MIDDLE EASTERN BEEF NACHOS WITH LEMON TAHINI SAUCE 🍋🤤 Crispy spiced pita chips. Juicy, spiced beef. Herby salad. And the creamiest lemon, garlic tahini sauce to bring it all together. This tastes like something from a restaurant but takes just 20 minutes. High-protein, healthy, and insanely good. You need this in your weekly dinner rotation 🔥 Serves 2 Macros (per serve): • 496kcal • 40.4g P • 49.8g C • 16.9g F Ingredients Pita Nachos • 2 low-calorie pita breads, 2 heaped tsp za'atar spice, 1 tsp chili flakes + 1 tsp salt Spiced Mince • 250g lean beef mince, 1 heaped tbsp za’atar, ¼ tsp chili flakes + ½ tsp salt • 2 cloves garlic, minced Herby Salad • ½ cucumber, diced • 10 cherry tomatoes, quartered • ½ red onion, thinly sliced • 3 tbsp chopped fresh mint • 3 tbsp chopped parsley • 1 tbsp olive oil • Squeeze of lemon juice • ½ tsp salt Lemon Garlic Tahini Sauce • 3 heaped tbsp Greek yoghurt • 1 tbsp tahini • 1 tbsp lemon juice (I use a little more as I like mine lemony) • 1 large clove garlic finely minced • ½ tsp salt ✨ Optional Garnish: • Toasted pine nuts or extra herbs Method 1. Make the Sauce: Whisk together yoghurt, tahini, lemon juice, garlic, and salt until smooth. 2. Chop the Salad: Mix cucumber, tomato, red onion, mint, parsley, olive oil, lemon juice, and salt. Toss, taste, season and set aside. 3. Crisp the Pita Chips: Cut each pita bread into 8 triangles. Lightly spray with olive oil, sprinkle with za’atar, chili flakes, and salt. Air fry at 190°C for 5–6 mins or until golden and crisp. 4. Cook the Mince: In a hot pan, add a drizzle of oil and cook garlic for 30 seconds. Add beef, za’atar, chili flakes, salt, and ¼ cup water. Cook until browned and saucy (about 5 minutes). Taste and season. 5. Assemble: Layer crispy pita chips on a plate. Spoon over the beef, then the herby salad, then drizzle with the tahini sauce. Garnish with pine nuts if using—and devour!
