I can't remember the exact old books but its Dragons and Giants. The spikes are there to repel dragonic bites from Great Wyrm stage dragons or heavy hits from Giant weaponry. And that's not an evolutionary trait, that was by design. There was originally only one Tarrasque, and it was made by the Primordials during the Dawn War but they lost control of it and put it to sleep because they made it unkillable (WHOOPS). I'm sure newer variants and folklore for it have arisen since I began playing so don't take my word for RAW, I'm just remarking from source material that came out decades ago. Besides, its not even an original D&D creature, its just a chimera from french mythology that was a mix of a lion's head, a spiked turtle's body, and a scorpion's tail that got a unique D&D twist 😂

Primordials, the tarrasque was made to eat the corpse during the dawn war to prevent gods and primordials from returning to life. That’s why its combat abilities are somewhat lacking, it’s a divine trashcan.

there was a concept I once heard about if your players defeat the tarasque to use whatever defeated it as an immunity of some sort for the next one. maybe what once killed a tarasque can no longer do so?

I'm not awake enough yet to remember what the details are, but years ago I ran across lore around the idea that the Tarrasque is not the only terrifying end game monster, and the other ones are way scarier. I did a campaign where one of them had been defeated centuries earlier, its heart shredded and locked away and the BBEG was collecting the heart pieces to do BBEG stuff.

oh don't know it could be one of the several dragons that are bigger than a tarrasque or the Astral dreadnaught or other tarrasque as there's a whole planet of them. or even crazier one of many elder elementals that are gargantuan in size.
