Blanch them in boiling water until they start to soften. Then drain and set aside.
2. Prepare the Green Beans:
Wash and cut the green beans into shorter pieces.
Bring a pot of water to a boil. Add a little cooking oil to the water.
Blanch the green beans for a short time until slightly tender, then drain.
3. Prepare the Chicken:
Cut the chicken into bite-sized pieces.
In a bowl, mix spring onion, ginger, light soy sauce, sesame oil, and oyster sauce in any amount you like.
Add the chicken to this mixture and let it sit for a few minutes to absorb the flavor.
Remove the spring onion and ginger from the bowl.
Add one egg yolk and one tablespoon of cornstarch to the chicken. Mix well and marinate for a few more minutes.
4. Cook the Chicken:
Heat oil in a pan.
Fry the marinated chicken until golden and cooked through. Set aside.
5. Fry the Potatoes:
In the same pan or a new one, fry the blanched potatoes until lightly crispy or golden. Set aside.
6. Final Mix:
In a large pan or wok, combine the fried chicken, potatoes, and blanched green beans.
