As much as I love Chai Kuih, I still find it hard to push myself to make it because I really don’t like handling flour 😅 thank goodness my laziness has pushed me to think out of the box and found the shortcut by using Vietnamese rice paper with tapioca starch for that transparent, chewy crystal skin! I loved the kucai (chives) version, but these days, the sengkuang (jicama) one is more common. So here it is and you’re welcome! 😇 . You’ll need: 🔸 Rice paper 🔸 Jicama 🔸 Carrot 🔸 Garlic & onion 🔸 Dried mushrooms 🔸 Dried shrimps (optional) 🔸 Oyster sauce (or veg version) 🔸 Salt & white pepper
