Traditionally, the chicken is dressed and torched—a method that enhances its flavor and texture, resulting in a distinct smoky taste and aroma. Think of it as Tinola’s older & smokier brother! This way of preparing the chicken is often part of a ritual, but there are more modern interpretations of the dish. You can even find many variations of this dish prepared in restaurants around the area. Huge shoutout to baguio mountain man for teaching us how to prepare this tasty dish!!! Ingredients used: Pinikpikan: - dressed and torched chicken - ginger - etag - sayote Tops - garlic - onions - water - salt & pepper to taste Served With: - Chili - Rice Instructions: - Combine all ingredients in a pot with water and allow to simmer for ~40 mins or until chicken is tender and cooked through. *for people who don’t have access to the dressed and torched chicken - an alternative can use regular chicken where its skin has been torched by a household blowtorch until the skin has slightly browned and blackened. #ASMRCooking #asmr #baguio #pinoycooking #filipinofood
Traditionally, the native chicken is beaten to bruise the chicken, and make the blood clot. That's the process they refer to as "pikpik". Hence, "pinikpikan". However, that is no longer being practiced today, because it is considered inhumane.
The preferred type of chicken is usually the broiler-cull or the cull chickens. The ones that have matured, and have tougher flesh, pressure cooked for about 45 minutes, or if you prefer to be more traditional, boiled over wood or charcoal fire for about 4 hours.
As for the veggies, some people also prefer water cress and/or sayote. They're all fine either way.
As a native of Baguio, I'm glad you guys enjoyed this dish. This is my favorite chicken soup dish, and I'd choose it over tinola every time.
