Yes, even perfect to take to the beach this summer 🌞 INGREDIENTS (makes 5–6 pancakes): ¾ cup (95 g) all-purpose flour 1 tsp (4 g) baking powder ¼ tsp (1 g) baking soda 2 tsp (20 g) sugar 1 egg ⅓ cup (80 g) Greek yogurt 2½ tbsp (35 g) milk 1 tbsp (15 g) neutral oil 1 tbsp lemon juice ½ tsp lemon zest 1 cup (120 g) fresh blueberries INSTRUCTIONS – In one bowl, whisk together the dry ingredients. – In another, mix the wet ingredients with the lemon juice and zest. – Pour the wet mix into the dry and stir until just combined. – Fold in the blueberries gently. – Cook over medium heat with the lid on, about 2 minutes 15 seconds per side. – Top with whatever you love most.
