also, you should be able to read the vibes of your table, I can tell when my guests are watching the bill amount and when they don't care and just get what they want. when they don't care about cost, SELL SELL SELL! top shelf liquor, adding shrimp or crab on top of steaks, premium sides, extra dressings or side salads, ect.

I worked at a comedy bar with a 2 drink minimum. Doubles were counted as 2 drinks. Asking if you’d like a single or double was normally an easy sell. You would get the occasional push back but it made my average sky rocket.
