@nonna_approved: NONNA’S AMARETTI! (and they’re GF) The OG Italian biscotti. These soft and chewy cookies are little bites of almond heaven - and best yet, they’re gluten-free! The marzipan flavour really dominates with these, so if you’re a hater like me, beware and don’t tell Nonna!! Makes one large container - approx. 40 biscuits 600g sugar 1kg almond meal 1 tsp almond essence 1 tsp baking powder 1/2 lemon, juiced 6 egg whites 1/2 cup vegetable oil Icing sugar, to dust Mix the dry ingredients in a bowl. Add the wet ingredients and stir with a wooden spoon until combined. Switch to kneading with your hands until a soft dough form (still within your mixing bowl). Preheat oven to 200C and line 1-2 baking trays. On another tray, spread a thin layer of icing sugar (about 1/2 cup). Take a generous teaspoon of the dough and place on the icing sugar tray. Gently press down into the icing sugar to flatten the dough into a circle shape. Flip over and lightly press again until the biscotti is well dusted all over. Arrange on the lined baking tray and repeat until you’ve finished your dough. Bake for 15 mins. They’ll still be quite soft when you finish baking but not to fear, they’ll harden up as they cool. Once cooled entirely, store in an airtight container. Nonna approved!
