the nutritionist i worked with to help my A1C would definitely encourage freezing like this!! i was explaining to her how i struggle w/ cooking because low energy due to chronic pain/mental health, she was great about explaining that frozen veggies are more nutritious than zero veg & encouraged me to remember that i can always order sides of veggies to take home so that i only have to cook the protein to save time & energy
