Ingredients: 1 lb string beans, trimmed 1 white onion, diced 3 tbsp extra-virgin olive oil 1 tsp chilli flakes 2 cups canned plum or diced tomatoes with juices 1 tsp salt Fresh basil leaves, torn Heat a large pan over medium heat. Add olive oil, onion, chilli flakes, tomatoes and stir. Use the back of a wooden spoon to smash the tomatoes. Add salt and mix again. Then, add the string beans. Cover with a lid and let it cook for 10-15 minutes until tender. Turn off the stove and let it cool down. Once it’s at room temperature, add in basil, mix, and serve. Enjoy! Serves 4-6 people
