@emilymaynutrition: Recipe 👇🏼 Follow for more easy healthy dinner ideas and low cal sweet treats 🌟 Sweet potato nachos, baked not fried, packed with flavour! A lighter dinner you’ll want on repeat 😙 Serves 2 Ingredients: 300g Orange kumara (sweet potato) 200g Venison or lean beef mince 1 Tbsp Tomato paste ½ tsp Smoked paprika ½ Tomato ¼ Red onion ½ Avocado 2 Tbsp Light sour cream 10g Parmesan cheese Fresh coriander Salt & pepper Spray oil Method: Peel and slice the kumara into thin rounds. Lightly drizzle with oil, season with salt&pepper, and air fry or bake at 200°C for 25 minutes, flipping halfway. Meanwhile, cook the mince in a pan with tomato paste and paprika until cooked through. Dice the red onion and tomato, and mash the avocado with a pinch of salt. Layer the kumara chips on a plate, top with the mince, salsa mix, mashed avo and sour cream. Grate over parmesan and sprinkle with fresh coriander.
