I use this particular marinade on chuck beef. One thing I do is I sear the meat before marinating. Not usually what is done but it makes for a deeper flavor in my opinion. Another thing I do when I don’t have time and need the meat done for the evening is a quick cheat where I’ll high sear on a stove, move it to an instapot, add the marinade and some water, and if I have 6-8 hours I’ll slow cook which covers the minimal marinating time but if I have to have it done in a late afternoon I’ll pressure cook it for about an hour. Pressure cooking speeds up marination and forces it into the meat.
