Butter 1 1/2 TBS. Flour Salt Pepper Onion Powder Garlic Powder Smoked Paprika 6 oz. Evaporated Milk 1 C. Heavy Cream 1 tsp. Dijon mustard 8 oz. Colby Jack Cheese 8 oz. Mozzarella Cheese 4 oz. Sharp Cheddar Boil pasta for 7 minutes. Strain then set aside. Mix spices set aside. Shred the cheeses set aside. Make a roux by melting butter in a saucepan add half the seasoning and flour, whisk to combine. Cook for 2 minutes on a medium low heat. Slowly whisk in evaporated milk til combined and smooth. Add remaining spices and mustard; mix. Now slowly whisk in heavy cream til completely combined and smooth. Cook for 2 minutes. Reduce heat to low and mix in half of the shredded cheese, mix til cheese is melted. Fold in pasta noodles until fully coated in cheese. Pour half of the mac and cheese in a square pan; add half of the remaining cheese. Pour remaining mac and cheese ontop; evenly sprinkle remaining cheese ontop. Bake at 350°F for 30 minutes. Broil for 4 minutes. Remove from oven and let cool for 5 minutes before serving. Double the ingredients for a larger crowd.
