New Brunswick Snow Crab Is Incredible! Sweet, Delicious, And A Fantastic Source Of Protein!  1 pound of your favorite rigatoni  1/4 cup butter, divided  2 tablespoons olive oil  2 large shallots, minced  4 garlic cloves, minced  3 tablespoons tomato paste  2 tablespoons chili crunch   2 ounces vodka  ¾ cup heavy (35%) cream  ½ cup grated Parmigiano Reggiano, plus more for topping  1/2 pound New Brunswick Snow Crab  1 cup ricotta  ½ cup minced fresh basil leaves  Juice of ½ a lemon  Sea salt and cracked black pepper  Cook the pasta in salted water according to the package directions (al dente, please). Drain and reserve ½ cup pasta cooking liquid.  Meanwhile, heat a large skillet over medium-heat and go in with 1/2 the butter and the olive oil. When melted, add the shallot, cook until softened, about 3 - 4 minutes. Add the garlic, tomato paste, and chili crunch, then cook for 2 minutes, stirring often.  Next add the vodka, cream, season with a good pinch of salt, and reserved pasta cooking liquid, bring to a simmer and cook until slightly reduced and thickened, about 5 to 6 minutes. Add the remaining butter, parm, and several cracks of black pepper, add 1/2 of your New Brunswick Snow Crab, then mix well until the butter is melted.
