@dearsaturdays: breakfast focaccia for my savory queens!!!! 🧅🌭🌽✨ —recipe— •dough: in a large bowl, mix 500g bread flour, 5g active dry yeast, and 500g water until no dry spots remain. add 10g kosher salt and 30g olive oil, and stir until you get a wet, sticky dough. cover and rest for 15 minutes. •stretch & fold: gently stretch one side of the dough upward and fold it over itself. rotate the bowl and repeat all the way around. cover with a damp towel between rounds. do this 3 more times every 30 minutes. •bulk fermentation: cover tightly and refrigerate for 24 hours. the dough should puff up and get jiggly. •scallion oil: blend 1 bunch scallions, ½ cup olive oil, and 1 tsp salt until smooth. strain through a fine mesh sieve or cheesecloth. reserve the oil and save solids for later use. •pan proof: generously oil a 9x13 pan. carefully transfer the cold dough into the pan, preserving as much air as possible. drizzle scallion oil on top and let rise at room temp for 4–5 hours, until puffy and jiggly. •dimple + top: with oiled fingertips, gently press dimples all over the dough. then scatter thinly sliced lap cheong (Chinese sausage), sweet corn, black sesame seeds, and flaky salt on top. •bake: preheat oven to 450°F. bake for 20–25 minutes, until golden brown and crisp on the edges. cool in the pan for 10 minutes before enjoying. finish with fresh sliced scallions before serving. #focaccia #recipesoftiktok #asianbreakfast #corn #scallionpancake
