Wrapping: After marination, the meat is wrapped in banana or palm leaves. Cooking method: It’s slow-cooked in an underground sand oven (a pit in the ground with hot coals). The wrapped meat is buried and left to cook for up to 24–48 hours. Result: The meat becomes fall-off-the-bone tender, smoky, and infused with spices. It’s usually served with rice.
