you didnt include sraff not showing up for work and calling in sick, wastage from staff making mistakes or taking stuff and difficult customers. And inflation that eats into profits. And equipment that breaks.

When you have 1 bad week (weather, staffing issues, supplier issues etc) it can takes weeks if not months to get back on your feet. There is no money in hospitality. It looks glamorous that’s all.

profit margin is so low that in my opinion it's not worth running that place. now if the revenue was lower and the profit margin still the same figure, then that might be a different story.

do away with the cleaners. get rid of at least 2 staff members. close on a Monday Tuesday. don't do uber. oncost the bank fees. put a little sign that says "cash preferred" your welcome.
